Organic Palm Sugar, from Cambodia, is a light golden brown sugar originally made from organic palm sap certified by ECOCERT International. Palm sugar is rich in nutrients and has low glycemic index. It dissolves and melts almost exactly like regular sugar; but, it is completely natural, undefined, and has far superior smell and taste. The sap is acquired from the flowers growing at the top of the sugar palm trees. This sap is then boiled and air-dried to form as crystalline and naturally brown in color sugar that is naturally rich in numbers of key vitamins, minerals and phytonutrients including potassium, zinc, iron, Vitamin B1, B2, B3, and B6.
